I’m still trying to get in shape for the summer, so I’ll be making lots of salads. This one is my absolute favorite! Even my hate-everything-with-cabbage husband ate it. You should be convinced now. The flavors are married perfectly, I can’t stop eating it. The crunchiness from sesame seeds and apples, the sweetness from raisins, the tangy dressing….mmm, I’m in heaven! Also, it’s good for you!
This salad is very easy to make and if you buy bagged shredded cabbage it will save you some time. I prefer to shred it myself. Here is what you need and then we’ll start making this delishness.
1/2 head of cabbage shredded (will make about 4-5 servings)
1 apple cored and sliced
4 oz swiss cheese
4 tbsp olive oil
1 tbsp vinegar
1 tbsp good yellow mustard
1/4 cup toasted sesame seeds
3 oz raisins
juice from 1/2 lemon
salt and pepper to taste
Shred cabbage with serrated knife or use a mandolin slicer, it’ll be probably faster. Place cabbage in a large bowl.
In a small bowl, whisk together the mustard, salt, pepper, olive oil and vinegar until the oil is mixed in well. Pour over shredded cabbage and toss well.
At this time you can place sesame seeds in a dry pan and heat over medium heat to get them toasted. Don’t forget them and stir occasionally.
Core and slice apple. You can leave the skin on or peal it, it’s up to you. Squeeze lemon juice over the apples so they don’t get brown spots.
Cut cheese into small cubes.
Add cheese, apple and raisins to cabbage and toss everything together. Add the toasted sesame seeds and voila! It took me 15 minutes from start to finish and I even shredded the cabbage with a knife. It makes a great side dish or a main course, just how I like it. Eat it fresh and enjoy!
