Berry Cobbler for Dummies

 

Leonardo da Vinci once said: “Time stays long enough for anyone who will use it”.

 

If only we could use it to do what we love doing. Unfortunately, most of us have to work and that’s not my idea of using the time, ha! But, when I do have free time you’ll find me here cooking, and baking, and picture taking, oh my!

 

I almost made me a liar by repeating how much I dislike baking, yet keep posting desserts I bake. What am I to do, my love for sweets dominates me. I still don’t enjoy the making as much as I do the consuming. Following a recipe to a T simply intimidates me. Oh well…

 

I never made the cobbler before but let me tell you, it is actually super easy. Most of you already know that, right? And I tweaked this recipe by using mixed berries instead of suggested raspberries, because that’s what I had on hand. Yay me!

Ingredients:
Serves 6

4 cups mixed Berries (you can stick with one type of berries if you prefer)
1 large Egg
1 cup Sugar
1 cup Flour
1 tablespoon Lemon Juice
6 tablespoons Butter, melted
Whipped Cream (optional)

Directions:

 

Preheat oven to 375 degrees Fahrenheit. Wash berries, drain and place in a lightly greased 8-inch baking dish (I divided them between 6 small ramekins – about 4” diameter- to get individual servings). Sprinkle berries with lemon juice.
In a medium bowl, stir together egg, sugar and flower until mixture resembles coarse meal. Sprinkle over fruit then drizzle melted butter over the topping. Bake for 30 minutes or until lightly browned and bubbly. Remove from the oven and let stand for 10 minutes. Serve warm or cold with whipped cream, if desired.

 

 

Note: if you’re making this in ramekins, place them on an aluminum foil-lined baking sheet and bake for the same amount of time.
