Eat Well – Iceberg Lettuce Wedge Salad

Somewhere, someone told me that iceberg lettuce had absolutely no nutritional value whatsoever and I have been avoiding it ever since. I didn’t want to pay to basically eat air. Well, they were wrong. Although it doesn’t have whole heck of a lot nutritional value it still has some like fiber, vitamin A and C, calcium, iron and a trace of some other. It is a low-calorie food with no fat, low in sodium and cholesterol-free. That was enough to convince me. I topped it with creamy buttermilk dressing and served along hard-boiled eggs for a complete, healthy lunch. And the tart flavor is so good in this quick recipe.

Ingredients:

Serves 4

1 medium-size Iceberg Lettuce, cut into 4 wedges
4 eggs, hard-boiled and peeled
½ cup Buttermilk
½ cup sour Cream
2 tablespoons Cider Vinegar
1 Garlic clove, minced
2 tablespoons Green Onions, chopped
1 tablespoon Parsley, chopped
Salt and Pepper

Directions:

 

In a jar with a tight-fitting lid, shake together all ingredients. Drizzle over wedges of iceberg lettuce and eggs and devour. (You could add bacon pieces but that wouldn’t be too healthy).
