Spring is in the air. It just didn’t get here yet and it cannot come soon enough. This winter was mild (#knockingonwood) so far. Life was mostly kind to us. My highlight was the family visit for our Christmas party. It is very hard to sync everyone on the same schedule (especially out-of-towners) and few people are always absent. We miss them dearly but party goes on. As it goes with Christmas, there was more food than anyone should eat. Honoring German ancestors, there was Sauerbraten (German style pot roast), red cabbage with apples, bread dumplings, German potato salad, green beans, mashed potatoes and unreasonable amounts of sweets. But this simple cream cheese spread stole the show. Go figure. Must be the wrapping, ha! Now I’m thinking to “wrap” it with hearts for Valentine’s, but somehow cheese spread does not sound romantic, although, it would make a cute gift.
8 oz Cream Cheese, softened (save the box!)
½ teaspoon Dill
¼ teaspoon Garlic Salt
Red Bell Pepper, diced
In a small bowl, mix the dill and garlic salt into the cheese. Pack the mixture back into the box lined with plastic wrap. Refrigerate for at least 3 hours. Unwrap it and flatten with a knife, which I didn’t do hence the wrinkly look.
Decorate with a green onion bow and red pepper dots before serving alongside crackers.
