Quick Ranch Chicken - All that's Jas

I’ve never made so many quick meals in a week’s time as I did this past week. It was a busy, busy, busy week. I’m so behind with everything and still trotting that every time I turn around I run into myself.

But I still have to feed my family and the meals like quick ranch chicken saved my day or two. I even found time to cook some broccoli with it for a more balanced meal. A side of veggies make any meal healthy, at least in my head.

Off I go, to run more errands and take care of things. Be a sweetheart and share some of your favorite quick meals with me, will ya? I sure can use few recipes as I don’t foresee me slowing down any time soon. Thank you bunches!  Hasta la pasta!

Ingredients:
Serves 4

6 slices Bacon, cut into narrow strips
3 cups dried Pasta or Noodles
4 boneless, skinless Chicken Breast halves
3 tablespoons Ranch Dry Salad Dressing mix
1 ½ cups Milk
2 tablespoons all-purpose Flour
1 tablespoon shredded Parmesan Cheese

In a large skillet brown the bacon over medium heat until crisp; drain on paper towels. Reserve two tablespoons of bacon drippings in the skillet.

Cook pasta according to package directions.

Meanwhile, cut chicken into bite-size pieces. Cook in the same skillet with reserved bacon fat until tender and no longer pink. Sprinkle flour and salad dressing mix over the chicken and stir well. Stir in milk; cook, stirring occasionally, until thickened and bubbly. Add bacon; cook for 1 minute more.

Thanks so much for this recipe. It looks fantastic. Do you have a good recipe for dry ranch mix? I have tried several and haven’t liked any of them. It gets expensive buying the little packets from the grocery store.

Yes, they are kind of pricey! I don’t have my own recipe but this one by Robin’s View is simple….you can omit dry buttermilk and just add fresh when ready to make the dressing or dip: http://robynsview.com/homemade-ranch-dressing-dry-mix-recipe/

Thank you. I’ll give her recipe a try. I actually ordered the dry buttermilk for a different recipe but it was awful.

Eek…I never had dry buttermilk, and now I don’t think I ever will, LOL. Have a great day 🙂
