Are you dreaming of summer? I’m over these cold temps! Winter was mild, but it seems to be catching up before it’s officially over. My favorite summer desserts usually do the trick when I get the winter blues. I have five go-to recipes because they’re so easy to make. Quick too, especially if you don’t have much spare time.
Losing an hour to daylight saving time is a nightmare if you are busy. Yesterday was tough. Instead of being productive I wasted my time thinking about the hour we lost and drinking enormous amounts of coffee, as if coffee would make the hour magically reappear. I guess I was hoping it would make me freaky fast, like those guys in Jimmy John’s commercials. Needless to say, I haven’t gotten anything done. But I managed to squeeze in a short nap and I NEVER nap, especially after my coffee fix.
My only consolation is knowing that winter is over, never mind the freezing temps. While I napped, I dreamed of summer. I dreamed of the time when I was a little girl and, with other neighborhood kids, performed every summer for our parents. We would set the stage and sing, recite, dance, and tell jokes. We charged for the entrance and we had great success. The money we made was then spent on ice cream and other sweet treats, but mostly ice cream. Ah, to be young again!
I still work hard for my ice cream, but now I can make my own. And I can put booze in it, ha!

Ice creams are easy to make. You don’t need an ice cream machine. I mean, you can have one if you want to. Don’t let me stop you 🙂
1 I’m calling back summer with this rum and raisins gelato with rum sauce. It was my SIL’s favorite gelato flavor when we visited Venice.
2 Margarita ice cream! Need I say more? Two of my favorites in one glass, THE ultimate treat. Yes and yes!
3 This fruit sushi is the easiest dessert ever! Tortillas, peanut butter, Nutella, and fruit are always in my pantry. OK, so maybe this is the laziest dessert ever, but we’re wanting something quick , right?
4 All you need is yogurt and a banana for this quicky (as in quick dessert). Add some strawberries for color contrast and you have a delicious treat in a minute. Super duper easy when you’re craving sweets but want to keep it light.
5 Nothing says HELLO SUMMER like Caribbean and coconut. Coconut is my favorite flavor in anything, so no wonder I make this Caribbean Cream dessert often.
