We were visiting my stepson at the college this weekend and I pondered long what to bring him. He never demands anything and you can’t even trick him into telling you what he likes. Birthdays and holidays are the worst trying to buy him a gift. Anyhow, I had this recipe for quite some time but never made it. It was waiting for a perfect occasion and a tolerant guinea pig. This weekend I got both: the parents’ weekend at Ryan’s fraternity house. It was fun watching him eat it (and like it) but not being able to detect the flavor. I mean, who would ever think to make cookies with bacon? Yes, I said bacon. And they were good. My not-a-bacon-fan husband had seconds. Everything tastes better with bacon.
1 cup creamy peanut butter
1/2 cup brown sugar
1/2 cup white sugar
1 tsp baking soda
6 slices cooked bacon, diced
In the bowl add the brown sugar, white sugar and peanut butter.
Mix this for 2 minutes on medium speed, then add the egg and baking soda. Mix for another 2 minutes.
Mix in the bacon using a spatula.
Roll out pieces between your hands. You should end up with about 15 balls. To make these cookies even better, roll them in some sugar. Place on an ungreased cookie sheet lined with parchment paper or silpat. Silpat is silicone non-stick baking mat that I absolutely love.
Using a fork, create a criss cross pattern. Place the whole cookie sheet in the freezer. Letting the cookies cool before baking will prevent them from completely melting during baking. Now preheat oven to 350 F degrees.
Bake for 12 minutes then cool on a wire rack.
