Country Apple Cake

Oh how I wish I was like Pioneer Woman living on a ranch and writing cool stories about our ranch life, but the truth of the matter is, I don’t live on a ranch. Nor do I live on a boutique wine estate in beautiful Cape City (but I wish I do). My office job, although not at all boring is really not worth writing about. Thus, more often than not, I have nothing interesting to report and have to stick to just sharing the recipe I like. This simple country apple cake I really do like. I lowered the sugar amount because it was a bit too sweet for my taste. Apples are so versatile.

Ingredients:
Servings: 16-20

3 cups finely chopped peeled baking Apples
2 cups all-purpose Flour
1 cup Sugar
2 Eggs
¾ cup vegetable Oil
1 teaspoon Salt
1 ½ teaspoons Baking Soda
2 teaspoons ground Cinnamon
1 teaspoon Vanilla extract

Topping:
2 tablespoons Butter, softened
1/3 cup packed Brown Sugar
1/3 cup Sugar
½ teaspoon ground Cinnamon
½ cup flaked Coconut
1/3 cup chopped Walnuts

Directions:

In a mixing bowl, combine flour, cinnamon, baking soda and salt. Add eggs, oil and vanilla; mix well (batter will be thick). Toss apples with sugar and fold into batter. Spread into a greased and floured 13×9 inch baking pan.

For topping, beat the butter, sugars and cinnamon in a small mixing bowl. Stir in coconut and walnuts. Sprinkle over the batter. Bake at 350 degrees Fahrenheit for 40-45 minutes or until the cake tests done.

You know how I like my sweets: with ice cream and chocolate syrup. It’s not optional.
