No Peel Red Potato Salad

Whether you’re invited to a company picnic, office potluck or neighborhood backyard BBQ you are always encouraged to bring a dish to share and this crowd-pleaser No Peel Red Potato Salad is a just a dish everyone wants me to make. Simple and quick to make, this salad will not break your bank but will leave everyone taking about it and asking for the recipe.

 


Ingredients:

3 lbs. Red Potatoes
1 medium-size Onion, chopped
¾ cup red Pepper, chopped
¾ cup Celery, chopped
3 hard-boiled Eggs, chopped
½ cup finely chopped Dill Pickles
¾ cup Mayonnaise
1 tablespoon Cider Vinegar
2 tablespoons dill pickle Juice
1 teaspoon Caraway seeds (optional)
A dash of Garlic Powder
Salt and Pepper

 

Directions:

Cover unpeeled red potatoes with salted cold water and caraway seeds in a large pot and bring to a boil. Caraway seeds are optional; however, they add a hint of great aroma that complements the potatoes. Caraway seeds are used mostly in rye bread but back home, in Bosnia, we add this spice to sauerkraut, sprinkled over home-made cheese scones, casseroles and occasionally we add it to desserts.

Cook the potatoes about 40 minutes or until they are easily pierced with a fork or skewer.

Meanwhile, combine onions, pepper, celery, eggs and dill pickles in a serving bowl.

Drain potatoes, cool just until able to handle and cut into half-inch pieces. Transfer to a bowl and sprinkle with pickle juice and cider vinegar. Toss salad gently with mayonnaise. Season the salad with salt and freshly ground pepper. Chill before serving.

    This salad looks delicious! I love that you make it so easy to make by not peeling the potatoes. The red potatoes really make it turn out so pretty and bright.
