Cauliflower Salad

What a great substitute for potato salad! Tastes just the same but it’s gluten free, low-carb and perfect for summer barbecues or winter slim-downs. I am a big fan! Cauliflower soaks up the flavor in a dressing really well because of all its creases and crevices. This easy-to-follow cauliflower salad recipe is worth saving!

 

Ingredients:
1 head Cauliflower
1 stalk Celery, diced
4 Green Onions, chopped
2 Eggs, hard boiled and diced
1 tablespoon Parsley, chopped
1 tablespoon Dijon Mustard
2 tablespoons Olive Oil
1 teaspoon Vinegar
½ teaspoon Salt

Directions:
On the stove, steam cauliflower previously chopped into florets until fork-tender. Allow to cool completely. Place cauliflower in a large bowl. Add celery, onion, eggs and parsley.
Whisk mustard, oil, vinegar and salt together until combined.
Pour over cauliflower and stir gently. Serve.


Cauliflower Salad

Cauliflower is a number one substitute in Paleo diet. Use it to make “rice”,  pizza “dough”, mashed “potatoes” or (but not limited to) this “potato” salad.
