Fresh Watermelon Mojito by Pink Recipe Box

My bloggy friend Nicola from Pink Recipe Box  just published her eBook, A Year of Cocktails! You don’t have to ask me twice to try out a cocktail. I drink them more often than I post about them (I’ve got to change that). With all the ingredients on hand, including the sage-looking mint from my garden, I made her Fresh Watermelon Mojito.

Nicola is a travel writer and food blogger who lives in Tenerife, the Canary Islands with her Official Treat Taster. Her beach-side apartment has a
gorgeous view. That is a perfect location to sip on a cocktail if you ask me. In fact, that is a perfect location for pretty much anything.

In her eBook, Nicola collected 52 sensational recipes for sipping throughout the seasons. I have a whole year to try them all. Although, I dislike watermelon I love the flavor in anything then, well, watermelons. (on the same token, I love cherries but dislike cherry flavored anything else).

Thus, my first choice of the 52 available recipes was the fresh watermelon mojito. I’m in love! With Nicola’s approval, I’m sharing the recipe with you.  To get all the other cocktail recipes, you’ll have to download her eBook.

Ingredients:
Serves 1 (with extra watermelon syrup)
For the Watermelon Syrup
– 1/4 large watermelon, skin removed and flesh cubed (about 3 cups)
– 1/4 cup sugar
– 1 tablespoon lemon juice

For the cocktail
– 4 ice cubes
– 8 fresh mint leaves
– 1/4 lime, sliced
– 1oz / 2 tablespoons watermelon syrup
– 1oz / 2 tablespoons white rum
– 1 cup soda water

 

Directions:

 

For the Watermelon Syrup

  1. Place the cubed watermelon into a saucepan and sprinkle over the sugar.
  2. Cook over a medium-high heat for 15 minutes, until the watermelon has totally softened. Use a potato masher or the back of a fork to mash down any bits of watermelon that won’t break down on their own.
  3. Leave to simmer for 10 minutes, until thick and syrup-like.
  4. Sieve into a small container and stir in the lemon juice.

For the Cocktail

  1. Muddle the ice, mint leaves and lime slices into the bottom of a glass.
  2. Pour over the watermelon syrup and white rum.
  3. Top with soda water, stir and serve.

    I’m here from dear creative’s link party 🙂 This sounds delicious! I love watermelon flavor, too, especially in fruity drinks! I’ll have to give it a try before summer’s over. I’m happy that fall is coming but glad there’s still enough time to do go to the pool and have mojitos!
