Let’s just agree that casseroles are perfect for family dinners and entertaining a crowd. There’s nothing like a comfort-style meal with simple ingredients that pack huge flavor. What I like about casseroles is they’re easy and plenty. Most are freezable, so if you’re usually cooking for two people freeze the half just before baking. Or invite your neighbors to dinner if that wouldn’t be weird. Ever since I moved to the States I haven’t had a friendly neighbor. It’s kinda sad. In Europe, your neighbor is like your family. But, I digress.


My first attempt at making a casserole, as a teen who never cooked in her life, turned out pretty darn well if I may say so myself. It had only four ingredients: elbow macaroni, feta cheese, sour cream, and an egg. I tossed the cooked pasta with cheese and topped with sour cream/egg mixture and then baked. I remember being so proud of it because my parents actually liked it.

Since my first dish, I’ve expanded my casserole horizons. Although you won’t find many on my blog (I don’t know why – that should change pronto), I make them often. My husband is a big fan too. His absolute favorite is this gobble-gobble tetrazzini that I make with leftover Thanksgiving turkey.
