Easy Cheesy Mushroom Pork Chops Recipe

Need a quick and easy, delicious dinner for midweek or weekend date meal? Then you’ll love this easy cheesy mushroom pork chops recipe that is made quickly and with a handful of fresh ingredients. Serve it with creamy scalloped potatoes or djuvec rice and your favorite vegetables for an impressive entree that everyone will love.

A good meal for family and friends (or for a post on the blog) doesn’t always have to be extravagant. Sometimes a simple dish can surprise and impress with its delicious flavor and who doesn’t like pleasant surprises?

There is nothing extravagant about the pork chops smothered with cheese and mushrooms but I do recall how impressive the photo in mom’s cookbook looked and even looked prettier when mom made it. For a picky eater that I was back then, no food looked good. However, I thought, if mom is serving German cheesy pork chops for guests then this dish must taste OK. And it did! Actually, it was excellent and it still is.

I often prepare pork chops this way, if I’m not swapping mushrooms for cauliflower.  As far as flavors go, it’s a tie between cheesy cauliflower topped pork chops and these with mushrooms.

This recipe is for two but you can easily double or triple the ingredients to feed your entire family and then some 🙂 Serve it with a chilled bottle of white wine. Of course, for the kids pour a glass of non-alcoholic sparkling white grape juice. Create an impressive memory they can talk about when they are old and gray.

Cheesy mushrooms pork chops fresh out of the oven

Ingredients:

Serves 2

  • 2 pork chops (bone-in or boneless)
  • salt and pepper to taste
  • ¼ teaspoon ground ginger
  • 3 tablespoons butter, divided
  • 6 oz. white mushrooms, sliced
  • ¼ cup chopped onions
  • 1 clove garlic, minced
  • 2 tablespoons sour cream
  • ½ cup shredded mozzarella cheese

~ Free Tip ~

Substitute butter with olive oil. Instead of shredded mozzarella, top each chop with sliced mozzarella (two slices each) or use Gouda, like the Germans do.

 

Directions:

  1. Season the pork chops with salt and pepper to taste and ginger.
  2. In a large saute pan or cast iron skillet, melt two tablespoons of butter.
  3. Brown the chops over medium-high heat until golden brown, depending on their thickness about 3-5 minutes on each side.
  4.  Remove the pork chops from the pan and add remaining tablespoon butter.
  5. Add the onions and mushrooms. Sauté until onions are soft and all liquid from the mushrooms has evaporated. Season with salt and pepper to taste.
  6. Add garlic and sauté until fragrant, about 30-60 seconds.
  7. Remove the pan from the heat and stir in the sour cream.
  8. Place the chops on a shallow baking sheet and top each with half the mushroom mixture and half the cheese.
  9. Bake at 350 degrees Fahrenheit preheated oven until cheese has melted and begun to brown, about 10-15 minutes.

    I don’t remember being a picky eater when I was growing up, but my kids sure are! I am confident that this meal would appeal even to them. It has three of my favorite things: cheese, mushrooms, and pork. SCORE! That being said, I usually shy away from pork chops because they dry out so easily. I’m definitely trying your recipe out, though, because—CHEESE AND MUSHROOMS. I also think that the mushroom-cauliflower swap sounds ingenious…and after all, cauliflower is right up there with mushrooms for me.
