Drunken Peach Cobbler
My friend Jackie is the sweetest person I know; she has no mean bone in her body. But, she makes one mean peach cobbler. Jackie has many talents, but the most appreciated one in our office is her baking skill. She is requested to bring this peach cobbler to all office gatherings. She knows how much we love it and she always brings two batches.
Since I had peach schnapps on hand, I added it to the mix but if you want to make it without the alcohol increase the amount of milk accordingly.
The cobbler is good warm or cold, but I really prefer it warm with vanilla ice cream and whipped cream. No need for a cherry on the top.
Ingredients:
1 large (29 oz.) can sliced Peaches
1 stick Butter
1 cup all-purpose Flour
1 cup granulated Sugar
1 ½ teaspoon Baking Powder
½ cup Milk
¼ cup Peach Schnapps
Directions:
Preheat oven to 350 degrees Fahrenheit. Melt butter in a 9×13 baking pan. In a mixing bowl mix together the flour, sugar, and baking powder. Add milk and peach schnapps and stir until smooth.
Pour over the melted butter. Do not mix! Empty the can of peaches with liquid over the batter. Do not mix! Sprinkle with sugar and bake for 45 minutes. Remove the pan from the oven and let cool slightly. Note: the cobbler has somewhat gooey texture and that is how it’s supposed to be. Don’t be alarmed thinking it’s undercooked.
Best served warm topped with vanilla ice cream.
