It seems like life is getting busier by the day. I swear I had more time on my hands when my daughter was living in the house and it’s not because she was helping with chores … because she didn’t. So, being a busy grandma nowadays, I’m really all about easy yet still delicious meals. I’m like those Germans who love their 20-minute meals.

 

Also, these quick one-pot dishes are especially favorable when they can stretch to feed a crowd. Stretching meals such as this can come in really handy sometimes. In Bosnian culture, it is acceptable to drop by unannounced and, as every good host would do, we share our dinner with our unexpected guests.

 

So you would throw extra rice in here and have ample food. Another awesome stretchy dish made in one pot is No Stir Bosnian Pot aka Bosanski Lonac. Same here, just add more potatoes or cabbage. More importantly, note that you never have to add more meat, but you can if you don’t need to be frugal.

One Pot Chicken Rice Dinner Recipe in 5 Easy Steps

This one pot chicken rice dinner is fully of yummy vegetables and topped with fresh herbs.

 

Ingredients:
Serves 4-6

  • 3 tablespoons olive oil
  • 1 yellow onion, diced
  • 1 bell pepper (any color), chopped
  • 2 garlic cloves, minced
  • 2 medium carrots, sliced
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tomato, chopped
  • 1½ cup chicken stock or water
  • 1 cup tomato sauce
  • ½ cup frozen peas
  • 1 cup uncooked rice
  • Salt (or Vegeta*) and freshly ground pepper to taste
  • Fresh parsley

*Vegeta is all-purpose food seasoning (dry vegetables and spices) that adds flavor and rounded taste.

Overall, this dish doesn’t need any enhancement but feel free to add your favorite herbs and spices.

 

 

Directions:

  1. To begin with, chop, dice, slice, and mince your vegetables and chicken.
  2. Next, in a large non-stick pan, cast iron or a saucepan, heat the oil over medium-high heat. Sauté onions, carrots, pepper, and garlic until they begin to soften about 3-4 minutes.
  3. Add chicken and brown quickly, then add tomato and cook until the meat is no longer pink about 5-8 minutes.
  4. Stir in the tomato sauce, stock or water, peas, and rice then season with salt and pepper to taste. Cover and cook on low heat, stirring occasionally until rice is cooked through, 10-12 minutes (add more water is necessary to finish cooking the rice).
  5. Finally, sprinkle with fresh parsley leaves before serving.

      That would work too, just not for Easter, LOL. I served rabbit for Easter one year when my daughter was little and the following year told her Easter was canceled because she ate the Easter bunny the year before. She was devastated. Poor thing, I think I scarred her for life. Easter blessings to you, Mrs. Shoes!
