Sun-Kissed Brownies


I think brownies are my favorite dessert. I take that back – I KNOW brownies are my favorite dessert. And cheesecake, cookies, ice cream… Well, pretty much anything sweet. But brownies, oh my, so chocolaty and chewy, warm your heart and make everything better piece of heaven. I could eat the whole pan in one sitting if I could. And boy I could, don’t get me wrong, but it would not be ladylike.

I made a yummy chocolate cake once with chocolate orange frosting and chocolate glaze from scratch just to realize the cake had brownie quality. My always-looking-for-shortcuts nature realized I could use boxed brownie mix and achieve the same cake in more than half the time. Best.Brownies.Ever. Chocolate and orange is a terrific combination and this brownie surprise is the proof. Like a kiss from the sun on a cold winter day.

1 box Brownie Mix (any kind you like)

1 box (5.3 oz) Cook and Serve Vanilla Pudding
1 ¼ cup Orange Juice
½ cup Chocolate Chips

½ cup Chocolate Chips
5 tablespoons Butter
2 droplets Vegetable Oil


Bake brownies according to the package directions. During the last 5 minutes of baking, in a small sauce pan mix pudding powder with orange juice. Bring to a boil over high heat stirring constantly. Lower the heat and stir until the pudding thickens. Remove from heat and add ¼ cup chocolate chips. Mix until chocolate is melted. Pour hot pudding mix over warm brownies. Let cool for 15 minutes.

Melt butter over medium heat until bubbly. Remove from heat and add ½ cup chocolate chips. Mix well until chocolate is melted. Add oil and stir (Oil gives the chocolate glaze a nice sheen). Pour over the orange frosting and cool completely on room temperature (do not refrigerate). When chocolate glaze is set, cut brownies into squares with a warm but dry knife. You can now refrigerate the brownies or eat the whole pan. I opt to eat it. 🙂
