Fettuccine and Smoked Salmon in Vodka Sauce

I have an old, quite large collection of recipes from ripped out magazine pages, some handwritten, and others printed out that I almost forgot about because anymore I refer to the bellowed internet for new ideas. I spent over an hour looking through them and have isolated at least a couple of dozen recipes to make soon. We’ll see how that goes.

I had this fettuccine and smoked salmon recipe since 2011, as the print date states. I think it’s been at least a couple of years since I made it which is a shame because it’s really good and simple. This is definitely a dish you can make either as a romantic weekend dinner or a quick weeknight supper. Your taste buds will thank you.


 

Ingredients:
Serves 2-3

½ pound Fettuccine pasta
4 oz. Smoked Salmon, diced
3 tablespoons Butter
1 cup Heavy Cream
2 tablespoons Vodka
½ cup grated Parmesan Cheese
1 tablespoon fresh Dill, chopped
Salt and freshly ground black Pepper to taste

 

Directions:

Cook pasta in salted water according to the package directions for al dente.

While pasta is cooking, melt the butter in a large skillet over medium heat. Add cream and bring to a boil. Add vodka. Cook on low until slightly thickened, about 4 minutes.

Add salmon, dill and season with salt and pepper.  Note: smoked salmon is salty, so use salt sparingly. Add drained pasta and gently toss to coat. Sprinkle with parmesan cheese.
