Fettuccine and Smoked Salmon in Vodka Sauce

Fettuccine and Smoked Salmon in Vodka Sauce

Need a recipe for romantic weekend dinner or a quick weeknight supper? This smoked salmon in vodka sauce and fettuccine pasta is absolutely delicious and easy to make even for a novice in the kitchen.

Fettuccine and Smoked Salmon in Vodka Sauce

I have an old, quite large collection of recipes from ripped out magazine pages, some handwritten, and others printed out that I almost forgot about because anymore I refer to the bellowed internet for new ideas.

I spent over an hour looking through them and have isolated at least a couple of dozen recipes to make soon. We’ll see how that goes.

I had this fettuccine and smoked salmon recipe since 2011, as the print date states. I think it’s been at least a couple of years since I made it which is a shame because it’s really good and simple. This is definitely a dish you can make either as a romantic weekend dinner or a quick weeknight supper. Your taste buds will thank you.

If you like smoked salmon, you will love it in this bisque with lobster, Have you ever considered adding it to your quiche? Try it, it’s easy and incredibly tasty!

Fettuccine and Smoked Salmon in Vodka Sauce

Serves 2-3

  • ½ pound Fettuccine pasta
  • 4 oz. Smoked Salmon, diced
  • 3 tablespoons Butter
  • 1 cup Heavy Cream
  • 2 tablespoons Vodka
  • ½ cup grated Parmesan Cheese
  • 1 tablespoon fresh Dill, chopped
  • Salt and freshly ground black Pepper to taste

Directions:

  1. Cook pasta in salted water according to the package directions for al dente.
  2. While pasta is cooking, melt the butter in a large skillet over medium heat. Add cream and bring to a boil. Add vodka. Cook on low until slightly thickened, about 4 minutes.
  3. Add salmon, dill and season with salt and pepper.  Note: smoked salmon is salty, so use salt sparingly. Add drained pasta and gently toss to coat. Sprinkle with parmesan cheese.
