Need an easy and healthy meal idea for your busy weekdays? This super delicious sweet and sour apple cabbage salad is quick to make, has a ton of flavor, crunch and uses fresh ingredients. Best of all, you can have a huge serving without the guilt because it is packed with fruit and veggies.

We are taking a break from apple pies and cheesecakes for a day, and chowing on this savory Japanese salad because we need to make room for tomorrow’s sweet treat.

Luckily, we received some samples and product to help us make 101 recipes. All opinions are my own. This sweet and sour apple cabbage salad uses Rainier Fruit Honeycrisp apples. They are my absolute favorite kind of apples and I was super hyped to get them in the mail. In the words of Rachael Ray: Yum-o!

Combined with cabbage, cheese, raisins, and toasted sesame seeds, they give this salad a perfect crunch and sweetness to offset the tangy dressing.

Did you know, in Japan sesame sits on most tables and is used as a flavoring much as salt and pepper are used in the West? So, don’t skip it in this recipe. It ties the flavors together.

Shredded cabbage mixed with apples, cheese, raisins, and sesame seeds is super delicious and quick to make.

Ingredients:
Serves 4

  • 14 oz. (1 package) coleslaw mix
  • 1 tablespoon distilled white vinegar
  • 4 tablespoon olive oil
  • 1 tablespoon yellow mustard
  • salt and pepper to taste
  • 2 tablespoons sesame seeds, toasted
  • 1 apple, cored and cut into 1/4 inch sections or chopped
  • 1/2 lemon
  • 4 oz. Swiss cheese, cut into 1/4 inch sections or cubed
  • 3 oz. raisins

 

~ Free Tip ~

Remove the larger, tough pieces of cabbage from the coleslaw mix. Alternatively, replace the mix with half of a cabbage head and slice thinly using a serrated knife, food processor with a shredding blade, or box grater.

You can toast sesame seeds by baking on an ungreased baking sheet at 350 F for 8-10 minutes or until lightly browned. Watch to avoid scorching.

 

Directions:

  1. Place coleslaw mix in a large bowl.
  2. In a small bowl, whisk together vinegar, olive oil, mustard, salt, and pepper.
  3. Pour over coleslaw mix and toss to coat.
  4. Toast sesame seedsΒ in a dry skillet over medium heat for 3-5 minutes or until lightly browned, stirring occasionally.
  5. Meanwhile, slice the cheese and apples. Squeeze lemon juice over apples to prevent from browning.
  6. Add cheese, apples, and raisins to the cabbage mix, then toss in toasted sesame seeds.

    Aw man, you mean it can’t be all cheesecake and pie all the time?! I suppose not. As my mother-in-law says we need our roughage too. And this looks so full of crunch and flavor, so it is a worthy contender for my attention if it can’t be all desserts!
