No Bake Energy Bites
These easy, no bake energy bites with coconut, almond, and dates are perfect on-the-go sweet snacks with a healthy dose of fiber.

- 2 cups unsalted almonds
- 1 cup shredded unsweetened coconut plus more for rolling
- 2 tablespoons coconut oil
- 2 1/2 cups dates pitted
- 1 tablespoon vanilla extract
- 2 tablespoons milled flaxseed optional
Combine almonds and coconut in a food processor until crumbly.
Add the oil, dates, vanilla, and flaxseed if using and process again until mixture holds together.
Using half a tablespoon measure, spoon out mixture and roll between your hands to form balls.
Coat each ball in the remaining coconut.
Store refrigerated in an airtight container or a plastic bag for up to a week.

Substitute almonds with cashews, pecans, or walnuts. Add cinnamon or orange zest to the mixture. Roll them in cocoa powder for a hint of chocolate. You can use butter instead of coconut oil for a non-vegan version.
